This is my recipe for 12s Royal Icing using Wilton Meringue Powder instead of egg whites. I follow the Wilton recipe, but add more water.
3 Tbsp Meringue Powder
4 cups sifted confectioner’s sugar (about 1 lb)
11 Tbsp of water
In large bowl, beat all ingredients at medium speed of stand mixer until icing forms peaks and loses its sheen, 7-10 minutes.
Makes about 2 3/4 cups of icing.
